Overview

When a major U.S. carrier transitioned its first-class inflight foodservice provider at Phoenix Sky Harbor Airport, the incoming caterer faced an immediate operational gap. 

Their permanent dish room was still under construction. The completion date did not match the airline’s go-live requirement, and from day one, the operation had to clean 2,500 pieces of first-class serviceware across 60 daily departures.

We engineered and delivered a complete temporary dish room for the aviation catering, fully commissioned before the first flight was catered. The carrier kept its transition date, and the caterer met first-class cabin standards on every flight. No flight schedule slipped.

The Challenge

The new foodservice provider needed to launch under hard constraints from multiple directions at once.

  • Hard go-live date with no facility in place: The airline locked the transition date to its broader provider switch, but the permanent dish room construction timeline did not align with it. The contract gave the caterer no flexibility on the start.
  • 2,500 pieces of first-class serviceware daily: The caterer had to handle a daily washing volume at full first-class standards. The team had to meet hygiene and throughput targets simultaneously, with no room for a slow start.
  • 60 daily flight cycles driving a relentless cadence: Each flight returned dishes that had to move through the wash and back into service before the next departure. Any delay at the dish station pushed back cabin service on the next flights.
  • Airport environmental compliance: An active airport catering site requires strict utility planning, full effluent containment, and adherence to airport regulations. Nothing about the install could exceed the site’s limits on temporary infrastructure.

The 53-foot conveyor dish machine carried the throughput required to sustain continuous warewashing across the full daily flight schedule. The dedicated generator kept power independent of facility infrastructure, so no airport building system became a single point of failure. The grey water bladder system provided full effluent containment, which is non-negotiable in an active airport catering environment. Our team managed all utility planning end-to-end and handed over a ready-to-operate temporary warewashing solution for the inflight catering team, with zero infrastructure dependencies on the client.
